RECIPE: SIOMAI AND CHAO FAN


For most Filipinos or maybe Asians in general, we consider dimsums as comfort food. Hence, we can eat as much dimsums as we can. So I tried making one of my favorite dimsums which is siomai. It brings back memories during school days since my friends and I used to eat siomai paired with gulaman and I think every student could relate to that. Here is the recipe which surprisingly pulled off well on the first attempt and below it, you can find my Chao Fan recipe which is a perfect pair for my siomai.

SIOMAI RECIPE:

INGREDIENTS:

½ kg ground meat (chicken, beef or in this recipe pork)

½ cup shrimp, minced

Sesame oil

½ cup onion, minced

½ cup carrots, minced

⅛ cup scallions, minced

½ tbsp black pepper

1 tsp. Salt

1 egg

1 pack fresh siomai wrappers from Chinese stores or Wonton wrappers

For sauce: soy sauce, calamansi, chili oil

PROCEDURE:

1. Mix all the ingredients above except for the wrapper.

2. Take a spoonful of the mixture and place in the wrapper. Seal it on the sides. Since I used the fresh siomai wrappers, it is kinda sticky but easier for the mixture to be sealed.

3. Steam the siomai for 10-15 minutes. You can also deep-fry it if you want fried siomai.

4. Serve with the chili garlic sauce.

CHAO FAN RECIPE:

INGREDIENTS:

3 tbsp cooking oil

1 cup ground meat

2 tbsp. garlic, minced

1 onion, finely chopped

1 bell pepper, finely chopped

1/4 cup Carrots, finely chopped

1 tsp Chili Powder

1 tsp Curry Powder

6 cups Cooked Rice

½ cup kangkong leaves

1 tbsp oyster sauce

2 eggs, beaten

2 tsp scallions, chopped

Salt and pepper to taste

PROCEDURE:

1. Put oil in a hot wok. Place the garlic and onions. Once the onions become translucent, add in the ground meat. Cook it until brown and add a bit soy sauce and sugar.

2. Add in the bell peppers and carrots. Season with salt and pepper, chili powder, and curry powder.

3. Mix the rice. Season with oyster sauce.

4. Add the kangkong leaves. Mix everything well.

5. Make a well in the center and add the eggs. Incorporate the beaten eggs with the mixed rice.

6. Top the rice with scallions.

7. Serve hot with siomai.
