I have always been a fan of Thai cuisine. In fact, I believe that it is the best cuisine in the world because of it's rich and eclectic flavors. It has a right mix of sweetness, sourness, and spiciness. One of their popular dishes is Pad Thai. Almost everyone loves this noodles dish. So when I made this one for my family, it was an instant hit and became their most requested dish. There are Pad Thai noodles kit available on grocery stores but I tried doing it from scratch. It is actually an easy one however, the sauce is the tricky part. You have to choose the best sauce for it and the right ingredients. Hopefully, you'll like my version when you try it and I would love to get a feedback.
INGREDIENTS:
Flat Rice Noodles
Diced Boneless Chicken Breast (Alternative: Cooked Tofu)
Peeled Shrimp
2 Eggs
Fresh Bean Sprouts
Sliced Green Onions
Shallots
Carrots
Crushed Peanuts
Sesame Oil
Cilantro
Chili Flakes
Sauce: 1/8 cup each of fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and sriracha
PROCEDURE:
Cook noodles as per the directions on the package.
On a pan, pour oil and add the lightly beaten eggs to cook. Set aside.
Prepare the sauce by mixing all the ingredients. Set aside.
On a hot wok, pour the sesame oil and add shallots.
Once fragrant, add the chicken/tofu and shrimp. Season with fish sauce. Cook until the chicken is slightly brown.
Add the carrots. Once cooked, add the bean sprouts and mix.
Toss in the scrambled eggs and noodles into the wok.
Pour in the sauce.
Top the noodles with cilantro and chili flakes.
Serve with lime wedges and crushed nuts on the side.
